Today, the previous 4 cows have become 50 with a daily production of 350-380 litres of milk from which we make about 50 kg of cheese.Milk is totally organic with no additives, milked from high quality cow breeds, such as Agerolese, Frisone and Pezzata Antica breeds. The farm has slowly become larger, with 20,000 square metres of land, an olive grove and a small lemon grove.

We still make cheese exclusively from the milk of our cows which are fed a diet of certified high quality ingredients, which gives the milk and consequently the cheese a unique flavour. Our purpose, today as in the past, is the quality of products, and not the quantity, and that good old-fashioned human relationship with our clients.
