Provolone del Monaco DOP (Protected Denomination of Origin)is a semi-hard mature stretched-curd cheese, manufactured in the Sorrentine peninsula – Monti Lattari area only with raw milk.

The peculiarity of Provolone del Monaco DOP is the result of a group of factors typical of the production area, especially the organoleptic properties of the milk drawn from cows bred on the territory, the 20% of which comes from the Agerolese cattle breed (an autochthonous breed threatened with extinction), associated with provolone del Monaco DOP since 2005.

The manufacture process still reflects the traditional craftwork and the special microclimate of the environment of production and ripening.
